  • 1000 grams chopped plums
  • 250 grams golden caster sugar
  • 1 vanilla pod, halved and the seeds scraped out
  • 1 cinnamon stick
  • 225 ml water

    Step 1
  • Put the water, sugar, cinnamon stick and vanilla pod & seeds into a medium sized saucepan and simmer until the sugar has dissolved
  • Step 2
  • Carefully add in the chopped plums, bring to the boil then turn down and simmer for 10 minutes until softened
  • Step 3
  • Strain the liquid into another pan and boil / reduce until thick and syrupy, discarding the vanilla pod and cinnamon stick
  • Step 4
  • Stir the plums back into the syrup and serve with some plain yogurt
  • Step 5
  • You can also use this to replace the cherries in my brûleè recipe
  • Step 6
  • This makes around 12 servings and can be frozen
