  • 3 avocados, ripe but firm
  • 80 grams plain gluten-free flour
  • coconut milk or alternative
  • 1 breadcrumbs made with 4 slices of gf bread
  • 1 tbsp melted sunflower spread
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper

  • Preheat oven to gas 6 / 200C / 400°F and place a wire rack over a baking tray

  • Halve the avocados and remove the stone, then slice each half lengthways into 4

  • In one bowl put the flour. In another some milk. In a 3rd bowl mix the other ingredients together

  • Dredge the avocado slices in the flour, then milk, then seasoned breadcrumbs and place on the wire rack

  • When all are done give them a light spray with cooking oil and put them in the oven to bake, turning once halfway through, for 20 minutes or until the crumb is golden
  • Step 7
  • Let rest and cool for 10 minutes then serve with a nice dipping sauce such as ranch or sweet chilli. These really go with anything so whatever you like!
