  • 225 grams chorizo, thickly sliced & slices halved
  • 2 medium onions, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 5 tsp fajita spice mix, see my chicken fajita recipe for a spice mix recipe
  • 400 grams can of red kidney beans, drained
  • 6 medium corn tortillas

How to Make Vickys Bean & Chorizo Tortillas

If you have prepared the ingredients needed, now time to start cooking. There are 7 steps you must follow to make Vickys Bean & Chorizo Tortillas in your home by yourself.

    Step 1
  • Dry fry the sliced chorizo in a frying pan over a medium heat for 3 or 4 minutes until the oil starts to drain out
  • Step 2
  • Add the onion and peppers to the pan and cook a further 3 minutes
  • Step 3
  • Add the fajita mix, you can add more or less to your taste. Throw in the beans too and stir to coat everything in the spices
  • Step 4
  • Warm the tortillas in the microwave for a few seconds then assemble your fajitas
  • Step 5
  • Spoon the bean & chorizo mixture onto the tortillas, fold up the bottom edge then fold in the sides. Add some salsa, sour cream (see my link for a dairy-free recipe) and guacamole to make it extra tasty
  • Step 6
  • Serve with a great side salad and some nachos!
