Ingredients: Vickys Bean Sprout 'Pasta' and Marinara Sauce

  • 'Pasta'
  • 1 tbsp olive oil / low cal spray oil
  • 320 grams (4 cups) bean sprouts
  • 120 grams (2 cups) chopped mushrooms
  • 2 clove garlic
  • salt & pepper
  • Marinara Sauce
  • 3 tbsp olive oil / low cal spray oil
  • 2 1/2 tbsp finely chopped onion
  • 400 grams can chopped tomatoes
  • 50 ml white wine
  • 6 tbsp tomato paste / puree
  • 2 tbsp freshly chopped basil
  • 1/2 clove garlic, finely chopped
  • 1/2 tsp dried oregano
  • salt & pepper
  • sweetener / sugar

How to Make Vickys Bean Sprout 'Pasta' and Marinara Sauce

If you have prepared the ingredients needed, now time to start cooking. There are 5 steps you must follow to make Vickys Bean Sprout 'Pasta' and Marinara Sauce in your home by yourself.

    Step 1
  • Start by making a puree of the canned tomatoes, wine, tomato paste, garlic and oregano
  • Step 2
  • Heat the oil in a pan and gently fry the onions until softened, then add in the tomato sauce and basil and let simmer for 30 minutes
  • Step 3
  • When the sauce is almost ready, heat the 'pasta' oil in a frying pan and add the chopped mushrooms and bean sprouts
  • Step 4
  • Stir fry on a high heat for 3 minutes then add the garlic and cook a further minute
  • Step 5
  • Season the marinara with salt & pepper and a little sugar if required to taste, then spoon some sauce over the top of the 'pasta' and serve with some garlic bread. My marinara recipe is also used within the one for my pizza potatoes, linked below
