  • 120 grams gluten-free / plain flour
  • 4 tbsp granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/8 tsp xanthan gum if using a gluten-free flour blend
  • 1 tsp bicarb / baking soda
  • 150 ml milk alternative such as rice / coconut milk etc plus 1 tbsp
  • 1 tbsp white or cider vinegar
  • 1/2 tsp vanilla extract
  • 200 grams fresh blueberries
  • 4 tsp oil
  • powdered sugar for topping

How to Make Vickys Blueberry Fritters

If you have prepared the ingredients needed, now time to start cooking. There are 7 steps you must follow to make Vickys Blueberry Fritters in your home by yourself.

    Step 1
  • Mix the flour, sugar, baking powder, xanthan gum if using and salt in a bowl
  • Step 2
  • In a cup mix together the baking soda, 1 tbsp milk, vanilla and the vinegar to make a fizzy leavener
  • Step 3
  • Make a well in the flour and add the rest of the milk and the vinegar mixture, stirring until a smooth doughy batter is formed
  • Step 4
  • Fold in the blueberries. It's okay if some break or mash while stirring. Let the dough stand a minute while you heat the oil in a frying over medium heat
  • Step 5
  • Turn the heat down to medium low and drop in the dough by tablespoon, cooking for about 2 minutes per side, until lightly browned. Bubbles will s5art to pop on top when they'recready to turn. 3 at a time is plenty and it's a good idea to do a test one to make sure your oil is at the right temp and to adjust the cooking time so the middle is cooked through
  • Step 6
  • When cooled dust in powdered sugar or make a glaze from powdered sugar and a little milk. Yummy!
  • Step 7
  • Serves 4 people, 3 fritters each
