  • 450 grams Vickys Gluten-Free Brown Bread Flour, see link below
  • 1/4 tsp salt
  • 2 tsp xanthan gum
  • 2 tbsp caster sugar
  • 2 tsp fast acting yeast
  • 1 tsp apple cider vinegar
  • 6 tbsp vegetable oil
  • 350 ml + warm rice or nut milk

  • Preheat your oven to gas 7 / 220C / 425°F and grease & flour a 2lb loaf tin

  • In a large bowl mix the flour, sugar, salt and yeast

  • In a seperate bowl combine the milk and vinegar
  • Step 4
  • Add the liquid ingredients to the flour mix to form a sticky dough, add 350mls to begin with then add extra by tablespoon as needed
  • Step 5
  • Add the oil and mix in. The batter should be like a thick cake mix, stiff enough to hold its shape but drop slowly from a spoon
  • Step 6
  • Pour the mix into the loaf tin and smooth the surface over with the back of a wet spoon
  • Step 7
  • Let rise for 20 minutes only then put in the oven
  • Step 8
  • Bake for 45 - 60 minutes until the bread sounds hollow when tapped on the base
  • Step 9
  • Let cool completely on a wire rack before slicing
