  • 60 ml olive oil
  • 1 small chipotle in Adobe, seeds removed and chopped
  • 2 tbsp white vinegar
  • 2 tbsp fresh lime juice
  • 2 tsp lime zest
  • 2 tsp honey / agave nectar
  • 2 cloves garlic
  • 1 tsp fish seasoning
  • 1 tsp hot sauce
  • 1/2 tsp ground cumin
  • 1/2 tsp chilli flakes
  • 1/2 tsp black pepper
  • 4 salmon fillets, total weight 1lb

  • Put all of the ingredients except for the salmon itself in a blender or use a pestle & mortar. Blend / grind until it forms a paste
  • Step 2
  • Put the salmon fillets in a dish. Add the sauce to the salmon and turn to coat. Cover and let marinade in the fridge for at least 1 hour but best if left overnight
  • Step 3
  • Preheat the oven to gas 6 / 200C / 400F. Put the salmon on lined baking sheet. Bake for 12 - 15 minutes until cooked through
  • Step 4
  • Can be served hot or cold
