  • 45 grams sunflower or olive spread/butter
  • 1 leek, trimmed & sliced
  • 1 onion, chopped
  • 1 large potato, diced
  • 1 turnip, diced
  • 1 carrot, diced
  • 3 clove garlic, finely chopped
  • 1500 ml vegetable or chicken stock
  • 300 grams spinach, shredded
  • 3 spring onions/scallions
  • salt & pepper to taste
