  • 2 large tomatoes, deseeded & diced

  • 6 tbsp red onion, finely chopped
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp lemon juice
  • 1 tsp low sodium salt
  • 1/2 tsp black pepper
  • Salmon
  • 4 salmon fillets
  • 1 tbsp olive oil
  • 1 salt to taste
  • fresh coriander for garnish
