  • 375 grams dry wild rice
  • 2 can (400g each) mixed beans, drained & rinsed - I used a mix of cannellini, flageolet and adzuki beans but any are fine
  • 1 can (340g) sweetcorn, drained
  • 1 red onion, peeled & finely sliced
  • 2 red bell peppers, deseeded & finely sliced
  • Dressing
  • 1 grated zest and juice of 1 lime
  • 2 tsp agave nectar / honey
  • 1 red chilli, deseeded & finely chopped

  • Cook the rice according to the packet instructions, then drain and rinse cold - I used Lundberg Wild Blend brand rice - it contains a mixture of long grain brown rice, sweet brown rice, wild rice, whole grain red rice and black rice

  • Put in a bowl with the mixed beans, sweetcorn, onion and bell peppers
  • Step 3
  • Mix the dressing ingredients together
  • Step 4
  • Toss with the other ingredients and add salt or other seasonings to taste
  • Step 5
  • This is a great side for picnics, potlucks, pizza, chicken, fish, goes with pretty much anything. You don't need to dress with the dressing I listed, you can use mayo or any other salad dressing you love
  • Step 6
  • This amount will serve 10 - 12 people
