  • 4 tbsp oil
  • 2 onion, chopped
  • 8 clove garlic, finely chopped
  • 2 tsp turmeric
  • 2 tsp ground cumin
  • 2 tsp mild or medium curry powder
  • 8 whole green cardamom pods
  • 4 tbsp tomato paste / puree
  • 200 ml vegetable stock
  • 400 grams canned, drained lentils
  • 200 ml full fat coconut milk

    Step 1
  • This curry is nice served with flat breads. Use shop bought or make homemade from my recipe
  • Step 2
  • Heat the oil in a saucepan and fry off the onions and garlic gently until softened
  • Step 3
  • Stir in the turmeric, cumin, curry powder and cardamom pods. Cook a further 2 minutes
  • Step 4
  • Stir in the tomato puree, stock and lentils
  • Step 5
  • Simmer for 5 minutes
  • Step 6
  • Warm the flat breads while you stir the coconut milk into the curry
  • Step 7
  • Remove the cardamom pods before serving
