  • 1 tbsp oil
  • 1 onion, chopped
  • 1 tbsp mustard seeds
  • 1 green chilli, finely chopped
  • 2 tsp finely chopped garlic
  • 1 tsp freshly grated ginger
  • 400 g canned, chopped tomatoes
  • 25 g desiccated (finely shredded) coconut
  • 1 tsp mild curry powder
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 2 tbsp coconut cream
  • 4 medium sized, pre-boiled potatoes, chopped
  • 2 tbsp freshly chopped coriander / cilantro
  • to taste salt
  • to taste sugar

How to Make Vickys Potato Curry

If you have prepared the ingredients needed, now time to start cooking. There are 4 steps you must follow to make Vickys Potato Curry in your home by yourself.

    Step 1
  • Heat the oil in a pan over a medium low heat and cook the onion, mustard seeds, chopped chilli, garlic and ginger for 5 minutes
  • Step 2
  • Stir in half of the chopped tomatoes, desiccated coconut, curry powder, turmeric and cumin
  • Step 3
  • Stir in the cream and chopped potatoes
  • Step 4
  • Add the rest of the can of tomatoes and let simmer for 10 minutes. You can add a bit of hot water if you feel the sauce is too thick. Stir through the chopped coriander, add salt and sugar to taste and serve hot with rice
