  • 2 tbsp vegetable oil
  • 2 onions, chopped
  • 4 chicken breasts, diced into bitesize pieces
  • 4 tbsp tikka curry paste - you can buy this from any store but I made one from the app which is linked below
  • 4 tbsp tomato paste / concentrated puree
  • 800 grams tinned chopped tomatoes
  • 300 ml coconut milk
  • 2 tbsp mango chutney or use sugar to taste
  • rice and naan bread to serve

How to Make Vickys Quick Chicken Tikka Masala

If you have prepared the ingredients needed, now time to start cooking. There are 6 steps you must follow to make Vickys Quick Chicken Tikka Masala in your home by yourself.

    Step 1
  • Heat the oil in a pan and fry off the onion until softened
  • Step 2
  • Add the chicken and stir until browned
  • Step 3
  • Stir the curry paste and tomato paste together to coat the chicken well and let cook to season for a couple of minutes (I used my own homemade garam masala /ras-el-hanout too)
  • Step 4
  • Stir in the chopped tomatoes and coconut milk and let simmer gently for 15 minutes then stir through the chutney / sugar
  • Step 5
  • Serve with rice and naan bread
  • Step 6
  • Kids love it, not too spicy!
