  • 1 onion
  • 1 carrot
  • 1 courgette
  • 1 red bell pepper
  • 450 grams cauliflower florets
  • 2 cloves garlic
  • 1 cm length of peeled ginger
  • 80 grams sweetcorn
  • 1/2 tsp ground cumin
  • 1/2 tsp turmeric
  • 300 mls strong vegetable stock
  • salt and freshly ground black pepper

    Step 1
  • Roughly chop the onion, carrot, courgette and red pepper into chunks and put into a food processor with the cauliflower florets, garlic and ginger, pulsing until finely chopped (but not pureed)

  • Put the mixture into a saucepan with the cumin and turmeric and stir to coat
  • Step 3
  • Add the stock and sweetcorn and bring to a simmer. Let cook until the stock has all been sucked up by the cauliflower, around 15 minutes
  • Step 4
  • Season well with pepper and some salt and serve immediately
