  • 700 grams whole aubergines/eggplant
  • 3 tbsp olive oil plus extra for greasing
  • 3 clove garlic, minced
  • 1 tbsp lemon juice
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 3 tbsp fresh chopped coriander
  • 1 salt & freshly ground black pepper to taste

  • Let cool then cut in half lengthways and scoop out the flesh with a spoon into a blender

  • Step 6
  • Stir in the fresh chopped coriander and season to taste with salt & pepper
  • Step 7
  • Chill before serving
