  • 1 red bell pepper
  • 1 orange bell pepper
  • 1 yellow bell pepper
  • 1 green bell pepper
  • 1 dip of choice - guacamole, hummous, sour cream etc
  • 1 other vegetables of choice, red & yellow tomatoes, carrot sticks, celery sticks etc
  • 2 small cauliflower florets
  • 1 green food colouring if required

    Step 1
  • Add green dye to your dip and mix in to make your desired shade of green. I used my coconut cheese here as our dip - recipe previously posted, but guacamole is a great one and kids actually quite like guacamole. Puree it smooth and perhaps add some mango to lift the flavour for them!
  • Step 2
  • Slice the peppers into rings
  • Step 3
  • Cut the rings in half and keep one half of each colour and the bottom end of the green pepper aside
  • Step 4
  • Stick a cauliflower floret in either side of your dip container, these are the clouds....
  • Step 5
  • Now place your half rings of pepper you set aside in between the florets to make the rainbow
  • Step 6
  • Serve a mixture of rainbow coloured vegetables with the rest of the peppers and dip - tomatoes, carrots, baby corn, cucumber, red onion etc
  • Step 7
  • Use the end of the green pepper as an edible shamrock decoration!
  • Step 8
  • Great fun for kids and a healthy snack
