  • 450 grams roasting potatoes, scrubbed clean
  • 1 1/2 tbsp sunflower oil
  • 6 tbsp sweet chilli sauce, see my recipe link below

    Step 1
  • Boil the potatoes whole in their skins, 15 minutes for medium sized potatoes, 25 minutes for large ones, until almost tender
  • Step 2
  • Preheat the oven to gas 6 / 200C / 400°F and line an oven tray with foil or parchment paper
  • Step 3
  • Drain the potatoes, then when cool enough to handle, cut each potato in half lengthwise then cut each half into 3 wedges
  • Step 4
  • Spread the wedges out on the baking tray
  • Step 5
  • Combine the oil and sweet chilli sauce and drizzle over the wedges, toss gently to coat
  • Step 6
  • Bake for 25 minutes until fork tender
  • Step 7
  • These go great with my flavoured mayos, or with even more sweet chilli sauce!
