  • 6 tbsp oil
  • 1/2 cup finely chopped onion
  • 1 inch piece of cinnamon stick
  • 2 cloves
  • 480 ml hot water
  • 1/2 tsp saffron threads
  • 1 cup long grain rice
  • 2 tbsp brown sugar
  • 1 tsp low-sodium salt
  • 1 pinch ground coriander
  • 1 pinch ground cardamom

How to Make Vickys Sweet Saffron Rice

If you have prepared the ingredients needed, now time to start cooking. There are 5 steps you must follow to make Vickys Sweet Saffron Rice in your home by yourself.

    Step 1
  • Heat the oil in a pan and add the onion, cinnamon stick and cloves, cooking gently until the onion has softened
  • Step 2
  • Meanwhile add the saffron to the hot water and let stand
  • Step 3
  • Rinse the rice well then add to the onion pan, stirring while cooking on a medium heat now for 5 minutes or until the rice starts to turn golden
  • Step 4
  • Stir in the water, sugar, salt, coriander and cardamom, bring to the boil then turn down to a simmer
  • Step 5
  • Put the lid on the pan and let simmer for 30 minutes or until all the water has been absorbed. The rice will look 'crater-like' on top, or 'holey' when done. Just fluff it with a fork and remove the cinnamon stick and cloves before serving
