  • 125 grams gluten-free / plain flour
  • 2 tbsp caster sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp mixed spice or cinnamon
  • 240 ml full fat coconut milk (canned)
  • 1 tbsp vegetable oil
  • 1 tsp vanilla essence
  • 1 oil spray for waffle iron

If you have prepared the ingredients needed, now time to start cooking. There are 6 steps you must follow to make Vickys Sweet Waffles, Gluten, Dairy, Egg, Soy & Nut-Free in your home by yourself.

    Step 1
  • Preheat your waffle iron and spray with oil
  • Step 2
  • Mix all the dry ingredients together in a bowl
  • Step 3
  • Put the milk into a jug with the oil and vanilla. Add to the dry mix slowly, stirring so no lumps remain but don't over mix
  • Step 4
  • Pour into waffle iron and cook until golden, 5 - 7 minutes is my preferred time
  • Step 5
  • Serve with cashew cream (see my profile for recipe), maple syrup and fruit salad! Yields 8 waffles, 2 per person
  • Step 6
  • FYI this is a recipe for fat waffles, not flat waffles lol. I use a Gordon Ramsay waffle maker, it makes lovely, thick waffles
