  • 3 eggs, beaten
  • 150 g flour
  • 1 tsp baking powder
  • 150 g butter
  • 130 g sugar
  • 3 Tbsp blueberry jam
  • 2 tsp powdered sugar

How to Make Victoria Sandwich

If you have prepared the ingredients needed, now time to start cooking. There are 6 steps you must follow to make Victoria Sandwich in your home by yourself.

    Step 1
  • Line a cake baking tin with butter or oil. Preheat oven to 180°C/350°F.
  • Step 2
  • Put the butter into a bowl, mix until it becomes creamy, then add sugar and mix very well until the mixture becomes a light creamy texture. Next, slowly add the beaten eggs while continuing to mix well.
  • Step 3
  • Sift the flour and baking powder, and put into the bowl. Mix roughly using a spatula until the texture becomes smooth.
  • Step 4
  • Put the mixture into the baking tin. Flatten the surface a little and bake for 35 min. Check whether it's cooked or not by poking a toothpick into the centre. If nothing comes out on the toothpick, it's done. If not done, then bake for another 10 min but cover with aluminum foil to avoid over baking.
  • Step 5
  • Remove to a cooling rack and liet cool for a while. When cool enough to touch, take the cake out from the tin and continue cooling.
  • Step 6
  • When the cake is completely cooled down, Cut the cake in half. Spread the blueberry jam on just one side. Finally, carefully put the two halves together, dust with powdered sugar and it's done! Enjoy this delicious treat at tea time just like Queen Victoria!
