  • 6 oz margarine
  • 6 oz caster sugar
  • 6 oz self raising flour
  • 2 medium eggs
  • filling
  • 250 ml double cream
  • 4 tbsp jam (any flavour)
  • 1/2 tbsp sugar
  • 1 icing sugar to dust

How to Make Victoria Sandwich

If you have prepared the ingredients needed, now time to start cooking. There are 11 steps you must follow to make Victoria Sandwich in your home by yourself.

    Step 1
  • Preheat oven at 220°C
  • Step 2
  • Grease two 7 inch sandwich tins with a little butter
  • Step 3
  • Mix the sugar and margarine together with a wooden spoon until light and fluffy
  • Step 4
  • In a separate bowl whisk the 2 eggs then beat this into the sugar/margarine mixture a little at a time
  • Step 5
  • Sift the flour into the mixture and fold in
  • Step 6
  • Divide the cake mixture evenly into the two sandwich tins and bake in the oven for 25 mins
  • Step 7
  • Leave to cool for a few mins then turn out onto a wire rack and leave to cool completely
  • Step 8
  • Whisk the cream with a little sugar
  • Step 9
  • Spread the jam onto one cake and cream on the other
  • Step 10
  • Carefully place one side on top of the other to create the sandwich
  • Step 11
  • Dust with a little icing sugar and tuck in!
