  • 8 large shrimp, deshelled
  • 3 tbsp olive oil
  • 1/2 cup fresh parsley, finely chopped
  • 2 tbsp sherry vinegar
  • 2 tsp mustard
  • 1 thyme sprig, leaves removed and chopped
