  • 4 green onions
  • 1 clove garlic, very fine chopped
  • 1 red bell pepper
  • 1 small can sliced black olives
  • 12 cherry tomatoes
  • 4 tbsp flat leaf parsley, chopped
  • 3/4 tsp cumin
  • 1 salt and pepper to taste
  • 2 tbsp olive oil
  • 3 cup cooked & cooled (but still warm)long grain white rice
  • 1 juice from half of a lemon
  • 3/4 tsp mild chili power

How to Make Warm Rice & Olive Salad

If you have prepared the ingredients needed, now time to start cooking. There are 12 steps you must follow to make Warm Rice & Olive Salad in your home by yourself.

    Step 1
  • set cooked cooled but still warm rice to the side.
  • Step 2
  • dice red pepper.
  • Step 3
  • chop green onion.
  • Step 4
  • in a skillet or pot add oil, onion, olives, red pepper, chili powder, cumin, garlic and lemon juice.
  • Step 5
  • turn heat on high and cook for only 3 minutes until hot and parsley gets soft and wilted
  • Step 6
  • meanwhile quarter the tomatoes.
  • Step 7
  • add to pot\skillet. saute for another minute until tomatoes are just warm.
  • Step 8
  • turn off heat and add rice. toss to coat.
  • Step 9
  • pour into serving bowl.
  • Step 10
  • serve.
  • Step 11
  • great served with fajitas! :) or tacos.
  • Step 12
  • serves about 4-5.
