  • 2 each Medium zucchini
  • 1 cup Sharp cheddar cheese, grated
  • 1 cup Pepper jack cheese, grated
  • 2 each Shallots, chopped
  • 2 each Garlic cloves, chopped
  • 1 each Anaheim chili, seeded and chopped
  • Salt and pepper
  • 1/4 cup Panko bread crumbs
  • 1 tbsp Parmesan cheese, grated fine
  • 1 tsp Olive oil

How to Make Zac's Zucchini Zonk

If you have prepared the ingredients needed, now time to start cooking. There are 7 steps you must follow to make Zac's Zucchini Zonk in your home by yourself.

    Step 1
  • Preheat oven to 350°F.
  • Step 2
  • Grate the zucchini coarsely with the skin on. Using a clean dish towel, squeeze the moisture from the grated zucchini.
  • Step 3
  • Combine onion, garlic, and chili in a small bowl.
  • Step 4
  • Lightly grease a 6" x 9" glass or ceramic dish. Layer half the zucchini and half of the onion mixture. Add salt and pepper. Add half the cheddar and half the pepper jack. Repeat with the remaining ingredients.
  • Step 5
  • Bake covered in the preheated oven for 40 minutes.
  • Step 6
  • Mix the Panko, Parmesan, and oil in a small bowl.
  • Step 7
  • After 40 minutes, remove the baking dish from the oven and remove the cover. Spread the bread crumb mixture over the top and bake uncovered for ten more minutes or until the top browns.
